Tasting Notes
Red fruit meets dark fruit, great layers of cherry, blackberry and black currant with hints of cocoa. Tobacco and spice on the nose deepen the aromas. This wine has a beautiful, elegant structure and a finish that lingers. Drink now and over the next 10 years.
Food Pairing
A delicious pairing with red meats, red-sauced dishes like eggplant parmesan or herb crusted pork chops.
Tech Details
- Site: 2023 was an outstanding quality vintage for Napa Cabernet, and we had amazing access to Cabernet Sauvignon from one estate on the Rutherford bench. Layers of red and dark fruit, and a texture that combines power and elegance. Two Cabernet blocks from the same estate in Rutherford. Outstanding quality vintage. Powerful and elegant.
- Soils: Both of the blocks have amazing gravely soil that has run off over the years from the Vaca Mountain range that is just to the east.
- Vintage: Very mild summer with cool nights which led to and extended hang time for the fruit. The extended hang time led to slow, intense flavor development with very refined elegant tannins.
- Fermentation: The fruit was hand sorted, meticulously processed so only whole berry grapes made it into the tank. Cold soaked for 5 days before innoculating with William Selyem yeast. Auto pump-overs for (max) extraction so no flavor is le behind. Skins were pressed of a er 16 days in tank to capture a full bodied wine that has elegant refined, approachable tannins.
- Aging: Aged 6 months in 20% new and 80% 2nd and 3rd. All French.
